Sweet Potato Pancakes

Sorry for the blurry pic guys! It was 5am when I made these and well…I was tired. :) they were delish though!

Sweet Potato Mash (great for pre workout fuel!)
-1 sweet potato (microwaved until soft)
-1/4-1/2 can coconut milk
-lots of cinnamon
-1cup applesauce
-1TB honey (optional)

Once sweet potato is soft, peel and mash in bowl. Add applesauce and cinnamon and pour in coconut milk, stirring, until you get a mashed potatoes consistency.

Pancakes:
Whisk two eggs up, add in 1/2 cup of sweet potato mash and stir until pancake like consistency occurs. (should be able to pour without being super runny).
-heat pan with 1-2TB fat of choice and pour three pancakes from batter.

**i topped mine with a little almond butter and apple butter and slivered almonds. Banana might also be good!

    You said to use half of sweet potato mash. What did you do with the other half? Also, how many pancakes did the half mash make?
