Paleo Pizza

So…it’s day 16 of my whole30 and I feel awesome! I haven’t just steered clear of all added sugars, grains, legumes and dairy for the past couple of weeks, but I’ve had zero caffeine as well! I was a little nervous about that since I wake up every morning at 5am to coach my outdoor Bootcamp or work with my personal training clients. I have to say though-I have had SO much energy ad felt awesome the whole time! Who needs caffeine right??? ;)

Anyway, I talked my friend marissa into giving the whole30 a try and thought it would be good to do some food prep with her. So she came over and we cooked up three really awesome meals! (I’ll be posting the other two next).

It was a lot of fun and only took us two
Hours and $50 to make all that food! It all tastes soooo amazing! Especially the Paleo Pizza….

Ingredients:
MEAT:
2lbs ground beef
1 onion
4 cloves garlic
2 TB cooking fat
Salt and pepper
TOPPINGS:
1/2 TB rosemary/oregano
(any or all of the following):
Fresh tomatoes and/or canned fire roasted tomatoes
baby spinach or kale
sliced black olives
mushrooms
zucchini
Bell pepper
Drizzle with pesto (see recipe)

Directions
Sauté onion and garlic in fat on medhigh heat, once translucent add beef and season with salt and pepper.
Once cooked through, set aside.

Add 2 TB fat to pan and heat until warm, add all vegetables (about 6-8cups) and herbs and sauté until cooked. (add in leafier veggies very last and cook for a minute or so).

Combine meat and veggies and top with pesto!

Pesto:
INGREDIENTS:
1/3c pine nuts or walnuts
1/2c olive oil
4 cloves garlic
2 cups fresh basil
1/2 cup fresh parsley
DIRECTIONS:
Sauté nuts and garlic on med heat about 5 minutes until slightly browning.
Mix with other ingredients and blend.
Refrigerate for a while until cooled down.

  1. You’re doing so well with your Whole30 challenge. I’ve never attempted one because I wasn’t sure I’d be able to do it. This pizza-in-a-bowl sounds fantastic!

  3. That looks absolutely amazing!!! I need to make this asap! and WAY TO GO with the no caffeine!!!! I love my coffee in the am but i know how important it is to sometimes just cleanse your body! I need to give that whole30 challenge a try :)
